Substituting Ohio Maple Syrup for Sugar


Syrup can be used whenever a recipe calls for a sweetener. When used as a substitute for sugar in baking or cooking, use 3/4 cup maple syrup to replace 1 cup of sugar and reduce the liquid in the recipe by about 3 tablespoons for every cup of syrup substituted.

    Maple Syrup Pie

In a large pan mix:
2 1/2 cups of pure maple syrup
1 stick of butter
Bring to boil and continue to boil for 10 minutes.

Seperate 4 eggs, set aside whites for meringue.

In a bowl:
Add 3/4 cup of flour
Add 1/4 cup milk and egg yolks
1/4 teaspoon salt
Mix until smooth

Add 3 1/4 cups of milk gradually to mixture in bowl.
Add to syrup mixture and cook until thick.
Add 2 teaspoons vanilla

Pour into baked pie shell or graham cracker crust.
 
            Meringue
Mix:
1/4 teaspoon cream of tarter
4 egg whites
Beat until stiff

Add 1/2 cup granulated white sugar gradually
1/2 teaspoon vanilla

Cover pie with meringue and bake at 350 degrees for 5-8 minutes.

This recipe makes two pies. You may want to double the meringue recipe.

Maple Bars

1/2 cup white granulated sugar
1/2 cup soft shortening
1/2 cup pure ohio maple syrup
1 egg, slightly beaten
2/3 cup sifted flour
1 cup finely chopped nuts or coconut
1 cup rolled oats
1/2 teaspoon baking powder
1 teaspoon vanilla

Mix all the ingredients thoroughly and spread in a greased 8x8 square pan. Bake for about 30 minutes at 350 degrees. While still warm, cut into squares. For doubled recipe use a 9x13 pan.

Maple Fruit Salad

1/2 cup Pure Ohio Maple Syrup
1 cup cream
1/2 teaspoon salt
1 can (2 cups) fruit cocktail
1 small can mandarin oranges
1 tablespoon flour
3 tablespoons lemon juice
3 tablespoons Pure ohio Maple syrup
1 cup pineapple chunks 
1 cup pecans

Mix flour with lemon juice until no lumps. Stir in 1/2 cup maple syrup. Cook while stirring over low heat, until thick. Cool. Drain fruit. Whip cream with salt. Slowly add 3 tablespoons pure ohio maple syrup beating constantly. Fold maple mixture and fruit into whipped cream. Chill.

Maple Drop Cookies

1/2 cup shortening
1 cup pure maple syrup
1 egg, beaten
2 1/4 cup flour
2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup chopped pecans

Combine in order given. Let stand 5-10 minutes before baking in 375 degree oven.
